Pei Modern at Collins Place
Pei Modern is about offering seasonal, market sourced produce in a fresh and contemporary setting. We are interested in the global democratisation of food – what in Paris is called ‘Bistronomy’ – that is, making sure that beautiful high quality ingredients can be offered to as many people as possible by concentrating on fresh and uncomplicated cooking techniques and offering these in a restaurant setting that is clean, modern and elegant.
Our restaurant is situated on the porte cochère of Collins Place, home to Sofitel Hotel Melbourne and the Kino Cinema complex, and offers an all day café seating 30 people, for morning coffee, simple lunches and late night supper and cocktails, as well as a more traditional dining room for 60 people, offering a lunch and dinner service, from midday and 5.30pm respectively. We also offer an outside terrace space for 40 people where our guests can enjoy the international buzz of hotel guests arriving and departing, as well as watching the people of Melbourne walk to and from work, home, the theatre or the movies. The restaurant will operate 7 days per week.
Collins Place itself was in part designed by renowned Chinese American architect I M Pei in the 1980s, he of the glass pyramid at the Louvre amongst other wonderful buildings, and we have in part chosen to honour him through our restaurant name; he also lends some inspiration to our restaurant design by our focus on a late 70’s early 80’s American west coast modern style.
